论酒精发酵中酵母菌的有效活化与营养管理 被引量:5

摘要 本文通过大量的研究案例和成果,深入论述了酵母的活化保护及营养管理的重要性及其对酒精发酵的贡献。在酵母活化复水时应用专业活化保护剂Goferm Protect,可以补充大量甾醇类,强化酵母菌细胞膜,显著增强其生存能力,降低死亡率。在酒精发酵1/3阶段,使用有机营养剂Fermaid O,相比使用单纯的无机氮源DAP,不仅能够提高发酵速率,缩短发酵时间,而且显著提升了葡萄酒的感官品质。
