摘要
多数果蔬含水率高,采摘后加工不当或不足容易出现腐败、营养流失问题。传统果蔬加工处理技术如罐藏、干制等虽可延长产品贮藏期,但存在加工过程营养价值低、产品利用率不高等缺点。利用食品加工高新技术解决果蔬加工问题,可以有效弥补这些缺点。本文介绍一种高新技术超微粉碎技术,通过分析果蔬产品应用现状,超微粉碎技术对果蔬产品持水性和自由基清除方面有一定提升效果。
Most fruit and vegetable water content is high,improper processing or lack of picking,corruption and nutrient loss.Traditional fruit and vegetable processing technology such as tank,dry system,etc.can extend the product storage period,but there are low nutritional value of processing,product utilization is not high and other shortcomings.The use of high-tech food processing to solve fruit and vegetable processing problems,can effectively compensate for these shortcomings.This paper introduces a high-tech ultra-fine grinding technology,through the analysis of fruit and vegetable products application status,ultra-fine grinding technology for fruit and vegetable products,water and free radical scavenging have a certain effect.
