摘要
气体置换包装是通过改变食品包装内的一般空气成份,以此减慢食品因腐败而变质的过程,达到延长食品货架寿命的目的。针对气体置换包装食品保鲜的特点及其发展,论述了气体置换包装食品保鲜的技术优势和基本原理,介绍了食品保鲜气体置换的种类与基本技术,研究了食品保鲜气体置换的生产设备和包装材料,提出了典型肉类食品的气体置换包装保鲜技术。
The replacing packaging is through changes in the general air composition of the food packaging,toslow food for corruption and metamorphic process,achieve the goal of extend shelf life of food.According to the characteristics of gas replacement packaging food preservation and development,this paper discusses the gas replacement packaging technology advantages and basic principle offood preservation,food preservation are introduced the kinds of gas displacement and basictechnology,studied the food fresh gas displacement of production equipment and packagingmaterials,puts forward the typical gas displacement technology of fresh meat.
