As a food additive,synthetic sweeteners are closely related to people’s life.The safety and quality issues are related to the health of consumers.This paper described the basic properties of food sweeteners,and analyzed the research progress of synthetic sweeteners and their detection techniques,in order to provide valuable reference for improving the food safety regulations.
