摘要
综述三维打印技术的原理,从巧克力糖果制品、烘焙食品、重组性食品等方面对三维打印技术在食品加工领域的重要发展的方向进行介绍,分析该技术在食品加工领域中的应用、发展及面临的挑战,以期为三维打印技术的进一步发展提供参考。
This paper summarized the principle of3D printing technology,and introduced the important developing direction of3D printing technology used in food processing field from the aspects of chocolate candies,bakery food and recombination food etc.The application,development and challenge of the technology in food processing field were also analyzed,so as to provide reference for further development of3D printing technology.
