摘要
介绍紫薯、山药、香芋等蔬菜面包的营养特性、工艺和配方研究进展,分析蔬菜面包的市场发展前景,综述其他品种蔬菜面包的研究情况,为开发蔬菜面包和丰富面包品种提供参考和借鉴。
This paper introduced the research progress in the aspects of nutritive peculiarity,process and recipe of vegetable bread such as purple sweet potato,Chinese yam and purple jam,analyzed the prospect of market development of vegetable bread,and summarized research and production status of other kinds of vegetable bread,in order to provide consultation and reference for developing vegetable bread and riching the varieties of bread.
