Application in Food Industry of Predictive Microbiology

在食品微生物学研究领域,预测微生物学有很高的应用价值。预测食品微生物学主要是借助预测模型,在不同环境因子下,预测目标微生物生长、增值或死亡的情况。本文综述说明预测食品微生物学一级、二级和三级模型的概念与主要内容,提出研究中存在的问题,并展望该领域的发展方向。

The prediction of microbiology has important application value to food microbiology.Predictive food microbiology is a mathematical methods by which the growth or inactivation data of bacteria in advance con be gotten.In this paper,the meaning and content of prediction of the primary,secondary and tertiary models of microbiology are briefly introduced in the form of literature review.Finally,current deficiencies and study trend in this area were stated.
