非线性化学指纹图谱在掺杂水解动物蛋白生牛乳鉴别中的应用 被引量:1

摘要 为打击市场上生牛乳中掺入水解动物蛋白以提高蛋白质含量从而获利的非法行为,采用非线性化学指纹图谱技术对掺入不同含量水解动物蛋白粉的生乳样本进行研究,结果表明掺入水解动物蛋白后的生乳非线性化学指纹图谱的振荡波形、振荡幅度以及振荡寿命发生明显的变化,通过直观特征性差异即可将其鉴别出来,且随着掺入量的增加,与纯生乳的非线性化学指纹图谱的相似度逐渐变小。振荡周期与水解动物蛋白掺入量呈指数负相关,振荡寿命在0~0.4 g呈线性负相关,相关系数R^2为0.998 5。利用非线性化学指纹图谱振荡周期、振荡寿命与水解动物蛋白的掺入量的关系,测得的20组盲样结果与实际掺入量吻合,相对标准偏差<5%,准确度高。因此,本研究为掺水解动物蛋白的生乳的鉴别及其掺入量的测定提供了一种全新的方法。 In order to crack down illegal activities that added hydrolyzed animal protein in raw milk which could enhance protein content and make profit.Raw milks with different amount hydrolyzed animal protein was studied by nonlinear chemical fingerprint.The result showed that there were significant differences in oscillation wave,oscillation amplitude and oscillation life with the samples added hydrolyzed animal protein.Comparing with feature differences of nonlinear chemical fingerprints,the sample which added hydrolyzed animal protein could be identified.And the system similarity of the sample nonlinear chemical fingerprint was decreased with the increase of hydrolyzed animal protein amount.And oscillation period,oscillation life has respectively a negative exponential and linear relation with adding amount of hydrolyzed animal protein.The correlation coefficient of oscillation life with adding amount of hydrolyzed animal protein R2was0.9985at the adding amount between0and0.4g.Using this method,20blind samples were detected,and the results were anastomosis for the actual adding amount,the relative standard deviation<5%.Therefore,the study provided a new method for identification and quantitative detection of hydrolyzed animal protein added in raw milk.
