南瓜果肉色泽与可溶性固形物含量的相关性分析 被引量:1

摘要 以5个南瓜品种的果实为试验材料,利用CR-3色差仪和PAL-1数显测糖计分别定量测定瓜颈处和瓜腔处生鲜果肉与蒸熟果肉的色泽和果肉中的可溶性固形物含量,研究果肉色泽与其可溶性固形物含量的相关性.结果表明:南瓜果肉中的红色成分与可溶性固形物含量呈极显著相关,生鲜瓜颈果肉中的黄色成分与可溶性固形物含量呈显著相关,生鲜瓜颈果肉中的可溶性固形物含量最高.研究结果可为消费者选购生鲜南瓜或烹饪南瓜提供指导. To study correlations between sarcocarp color and total soluble solids content渊TSSC冤in Cucurbita moschata fruit,5varieties were selected and the values of吟L,吟a,吟b were obtained by CR-3colorimeter,TSSC were measured by PAL-1digital refractometer both in fruit crookneck and cavity part of fresh and steamed sarcocarp,respectively.The results indicated that there was a very significant positive correlation between吟a渊the red冤and TSSC in sarcocarp of whole fruit,a significant positive correlation between吟b渊the yellow冤and TSSC in sarcocarp of fresh fruit crookneck.In addition,the highest TSSC in C.moschata was found in sarcocarp of fresh fruit crookneck.These results provide consumer a guidance of C.moschata shopping by fruit color.
