摘要
南果梨属于呼吸跃变型果实,采后衰老速度很快,易导致果实品质劣变和腐烂,严重影响果实的贮藏期和货架期.本文以南果梨果实为材料,探讨采后苯并噻重氮(BTH)处理对果实贮藏品质的影响.商业成熟度的南果梨果实采收当天用100 mg/L BTH浸泡处理,清水处理为对照,通过生理生化分析,了解BTH对果实失重率、呼吸强度及品质指标的影响.结果表明,BTH处理降低了常温贮藏过程中南国梨果实的失重率,显著抑制了果实呼吸强度的升高,但不影响呼吸峰值出现的时间.此外,BTH处理还抑制了果实可滴定酸含量的升高和果肉硬度的下降,同时提高了果实抗坏血酸含量.由此表明,采后BTH处理通过抑制呼吸强度,降低营养物质的消耗,从而保持南果梨果实的品质.
As climacteric fruits,rapid senescence is one of the important factor affects storage life and shelf life of the fruits and leads to quality breakdown and decay of Nanguo pear fruits after harvest.Nanguo pear fruits were used as materials to study the effects of postharvest BTH treatment on the fruit quality during storage.Commercial maturity fruits were harvested and dipped with100mg/L BTH to determine the treatment on weight loss,respiration rate and quality parameters.The results indicated that BTH treatment reduced weight loss of pear fruit during storage at room temperature,and significantly inhibited the increase of the fruit respiration intensity,but the treatment did not affect the peak time.In addition,BTH treatment also inhibited the increase of titratable acid content and decrease of flesh hardness.The content of ascorbic acid in the fruit was also induced by BTH treatment.All these results suggest that postharvest BTH treatment maintain the quality of Nanguo pear fruits by inhibiting respiration intensity and reducing the consumption of nutrients.
