摘要
内生菌对葡萄生长发育和葡萄酒酿造具有重要影响。针对内生菌的特性与功能,综述了葡萄生长期间内生菌的变化对果实品质的影响,以及葡萄酒酿造过程中内生菌对酒的颜色、酚类物质稳定性的重要作用。进一步阐述了葡萄酒内生菌群落多样性与主要色素类物质之间的相关性,内生菌类群动态对各色素类物质和与色素类物质相关物质变化的响应机制。并提出了目前内生菌的常用鉴定及分离方法,为探讨内生菌与葡萄品质和葡萄酒颜色之间的关系,及内生菌对葡萄酒陈酿期间的颜色变化机制奠定基础。
Endogenous bacterium have important influence to grape growth and winemaking.According to the characteristics and functions of endophytic bacteria,the effects of endophytic bacteria on fruit quality during grape growth,and the important role of endophytes on wine color and phenolic stability during winemaking were reviewed.The relationship between the diversity of wine endophytic bacteria community and the main pigments,and the response mechanism of endophyte community dynamics to the changes of pigments and pigment related substances were discussed.The common identification and isolation methods of endophytic bacteria were put forward,which laid a foundation for the study of the relationship between endophytic bacteria and grape quality and wine color,the mechanism of color change during wine aging.
