摘要
采用液液萃取和固相微萃取结合GC-MS对八月瓜果酒香气成分进行了定性分析。结果共检出74种组分,主要包括酯类化合物21种,杂环类化合物23种,醇类化合物12种,其他类化合物7种,未知物11种。液液萃取主要呈香物质有2,3-丁二醇、苯乙醇、4-羟基-2,5-二甲基-3(2H)呋喃酮、乙基环戊烯醇酮等,固相微萃取的主要呈香物质为乙酸乙酯、右旋萜二烯、薄荷醇、大马酮、香叶基丙酮等。本实验用不同极性的萃取方式较为全面地对八月瓜果酒的香气成分进行了剖析。
Qualitative analysis of the flavoring components of Akebia trifoliata fruit wine was carried out by liquid-liquid extraction,solid-phase microextraction and GC-MS.74kinds of flavoring components in total were detected including21kinds of ester compounds,23kinds of heterocyclic compounds,12kinds of alcohol compounds,7kinds of other compounds and11kinds of unknown compounds.The main aromatic substances by liquid-liquid extraction included2,3-butanediol,phenylethyl alcohol,4-hydroxy-2,5-dimethyl-3(2H)furanketone,3-ethyl-2-hydroxy-2-cyclopenten-1-one,etc.The main aromatic substances by solid phase microextraction included ethyl acetate,d-limonene,menthol,damascenone,geranylacetone,etc.In the experiment,the flavoring components were analyzed in a comprehensive way by using different polarity extraction methods.
