摘要
"食品工艺学实验"是食品质量与安全专业的必修课程,该门课程的学习对提高本专业学生了解食品加工生产过程、掌握影响产品质量安全的关键工艺及达到预期的培养目标均具有重要作用。本文通过更新教学方法、重新架构教学组织形式、充实教学内容和改革考核方式等措施对本门课程进行教学改革和探索,极大地提高了学生学习的积极性和热情,并积极参与到实验的整个过程中,有效提高了该门课程的教学效果,增强了学生的专业技术能力。
"Food Technology Experiment"is a compulsory course for food quality and safety specialty.The study of this course plays an important role in improving students'understanding of the food processing and production process,mastering key processes that affect product quality and safety,and achieving the desired training objectives.Through the updating of teaching methods,the re-construction of teaching organization forms,the enrichment of teaching contents and the reform of assessment methods,the teaching reform and exploration of this course has greatly improved students'enthusiasm for learning,and they have actively participated in the whole process of the experiment.This has effectively improved the teaching effect of the course and enhanced students'professional and technical capabilities.
