摘要
为掌握西藏藏猪血液的生化指标及其抗氧化性能,并进一步探讨宰后肌肉抗氧化性能的变化,本研究对国家级保护区内的3个西藏藏猪群体进行了血液和肌肉的测定。结果表明,在3个西藏藏猪群体的血液指标中,只有AST、ALP、TP、CK、GLU和LDH存在显著差异(P<0.01),其他生化指标均差异不显著;而且血液和宰后肌肉的抗氧化性能指标均差异不显著。但随存放时长的增加,西藏藏猪屠宰后肌肉SOD和T-AOC含量均逐渐下降;但是,肌肉中MDA的含量则呈现升高趋势。结果提示,西藏藏猪不但对高海拔低氧具有适应特性,而且宰后肌肉还具有独特的抗氧化性能和猪肉品质,研究结果为西藏藏猪遗传资源的保护利用提供了理论依据。
The aims of this study were to understand the serum biochemical indices and antioxidant capacity,and to further explore the changes of antioxidant properties of the muscle after slaughter of Xizang Tibetan pigs. Therefore, the blood and muscle samples of the 3 central areas of Xizang Tibetan pigs were determined. The results showed that the level of AST, ALP, TP, CK, GLU and LDH in the serum of Xizang Tibetan pigs in the 3 central producing areas was significant difference(P<0.01). However, there were no significant differences in the antioxidant properties of serum and muscle. However, with the increase of preservation time, the activity of SOD and T-AOC in muscle decreased gradually, but the MDA content in muscle increased. The results showed that Xizang Tibetan pig not only had adaptability to high altitude hypoxia, but also had unique antioxidant properties and pork quality after slaughter; and these results also provide a theoretical basis for the protection, exploitation and utilization of Xizang Tibetan pigs.
