摘要
分析了解2017年贵州省市皮蛋中铅的含量水平,为开展卫生监督工作和制定科学的标准提供数据支持。方法在贵州省大型超市、综合市场、食品企业以及私营个体等地采用多级分层抽取具有代表性的皮蛋65批次。采用GB5009.12-2017规定的石墨炉原子吸收分光光度法测定;以GB2762-2017规定限值评价。结果 8批次皮蛋中铅含量超标,不合格率为12.31%,7批次铅含量超过0.4 mg/kg,虽然合格,但是与标准值接近(标准值为≤0.5 mg/kg)。皮蛋中铅含量过高对消费者健康造成影响,相关部门应加大执法力度,加强食品安全监督。
To analyze the content of lead in preserved egg in Guizhou in 2017,and provide data to support for the development health supervision work and make scientific standard.Methods A typical 65 batches of preserved eggs from the large supermarkets,wholesale markets and private self-employed and other places using multilevel stratified extraction were collected in Guizhou,the lead contents were detected according to the national standard method GB5009.12-2017 and the quality of the samples was evaluated according to the national health standard(GB2762-2017).Results The lead content in 8 batches of preserved eggs exceeded the standard,and the unqualified rate was 12.31%,7 batches with lead content exceeding 0.4 mg/kg,although qualified,the standard value was close to the standard value≤0.5 mg/kg.Effects of excessive lead content in preserved eggs on consumers health,we should strengthen the intensity of law enforcement,promote food supervision.
