摘要 葡萄酒因为其美妙的口感和特殊的品酒方式以及优雅的喝酒氛围被很多人喜爱,我国对干红葡萄酒的研究也随着近些年红葡萄酒的火热而逐渐的升高。陈酿型的干红葡萄酒的制作工艺较为复杂,要经过原料选取、破碎、添加酶、发酵等等一系列的流程,在每一个环节都要经过严格的审查和细节的把控,只有这样才能做出口味最独特的葡萄酒,介绍一下陈酿型干红葡萄酒的生产工艺。 Wine is loved by many people due to its wonderful taste,special tasting manner and elegant drinking atmosphere.The research on red wine is increasing during recent years in our country with the popularity of the red wine.The process of making the dry red wine of aging brewing type is complicated.A series of processes such as raw material selection,crushing,enzyme addition,fermentation,etc.should be controlled strictly in every step,which is the only way to make the wine with most unique taste.In this paper,a brief introduction of the dry red wine of aging brewing type was given for the friends in various industries who love wine.
