摘要
亚硝酸盐主要是通过硝酸盐在酶和细菌作用下进行还原,通过模拟小肠环境,研究了大肠杆菌对硝酸盐转化为亚硝酸盐的条件。研究发现,影响转化的主要因素是温度和p H,转化量最大的条件是温度40℃,p H为7,基液体积为65 m L,接种环数为6。可以看出在人体正常的体温下,小肠p H呈中性时,细菌数越多,转化量越大。
Nitrite was mainly reduced by nitrate under the action of enzyme and bacteria.In this paper,the conditions of transformation of nitrate into nitrite by Escherichia coli were studied in the simulated small intestine environment.It was found that the main factors affecting the transformation were temperature and pH,and the conditions of maximum conversion were that temperature was 40℃,pH 7,base liquid volume 65mL,and oese 6.It could be seen that under the conditions of normal body temperature and that the pH of the small intestine was neutral,the more bacteria there was,the larger the amount of transformation was.
