摘要
早餐位于一日三餐之首,早餐食物的种类及摄入量对人们的健康具有很大的影响.通过查阅国内大量文献,分析了早餐食品具有的区域特征明显、品种偏于简单、卫生营养状况不容乐观、科学合理早餐初见端倪、手工操作为主、西式早餐在各级酒店占较大比例、就餐形式趋于多样化、早餐社会化有较好发展前景、针对不同人群早餐成为时尚、个性化选择性增强等现状,且早餐食品具有向天然化、安全化、营养化、多样化、艺术化、便捷化、实惠化、工业化、规模化和品牌化发展的趋势.
Breakfast is the first one of three meals a day.The type and intake of breakfast food had a great influence on people’s health.Based on a large number of domestic documents,the present situation of breakfast food was analyzed.The present situation of breakfast food was shown as follows:obvious regional features,uncomplicated variety,not optimistic status of health and nutrition,some signs of scientific and reasonable breakfast,mainly traditional manual-operation,larger proportion of western breakfast in hotels at all levels,diverse dining forms,a good prospect of breakfast socialization,breakfast for different groups of people becoming fashionable,enhancement of individual selection.The development trend of breakfast food was prospected,and breakfast food would be natural,safe,nutritious,diversified,artistic,convenient,affordable,industrialized,large-scale and branding.This paper could provide some certain scientific basis for the processing of breakfast food.
