摘要
采用常规生化分析方法对灰裂腹鱼(Schizothorax griseus)肌肉进行分析并评价。分析的主要指标:常规营养成分、氨基酸、脂肪酸和矿物质元素。灰裂腹鱼的含肉率为71.22%,肌肉鲜样的粗蛋白含量高达22.98%,粗脂肪含量低,为1.35%。其干样含有18种氨基酸,氨基酸总量(TAA)为77.02%,包括8种人体必需氨基酸(EAA),总量为31.69%,必需氨基酸的构成比例符合FAO/WHO的标准;灰裂腹鱼的第一限制性氨基酸是色氨酸(Trp),赖氨酸(Lys)的氨基酸评分(AAS)和化学评分(CS)都最高,分别为2.28和1.76,呈味氨基酸的总量为34.73%;肌肉干样的饱和脂肪酸(SFA)、单不饱和脂肪酸(MUFA)、多不饱和脂肪酸(PUFA)含量分别为24.4%、41.3%、25.6%;一共检测到8种矿物质元素铁、锰、锌、铜、钙、镁、钾、钠,其比例合理。结论:灰裂腹鱼味道鲜美,具有较高的营养价值和巨大的开发潜能。
Conventional biochemical analysis methods were adopted to analyze and evaluate the content of nutrients,amino acids,fatty acids and minerals in Schizothorax griseus muscles.The analysis results showed that the flesh content was 71.22%,the rough protein in wet samples of muscle reached 22.98%,with the fat was only 1.35%.There were 18 amino acids in the dry samples of muscles,the total content of amino acid contained 77.02%,in which essential amino acid took up 31.69%.The EAA composition met the Food and Agriculture Organization/World Health Organization standard.According to the nutritional evaluation on acid score(AAS)and chemical score(CS),the first limited amino acid was tryptophan(Trp),with the lysine(Lys)having the highest score of 2.28 and 1.76,respectively.The content of flavor amino acids was 34.73%.The content of saturated fatty acid(SFA),monounsaturated fatty acid(MUFA)and polyunsaturated fatty acid(PUFA)was 24.4%,41.3%and 25.6%,respectively.Total 8 minerals(Fe、Mn、Zn、Cu、Ca、Mg、K、Na)were tested in this study.The proportion of these minerals were reasonable.According to the results,S.griseus is nutritious and delicious in taste,it has high nutritional value and great potential to develop.
