摘要
为探讨广益黑猪胴体品质和肉质性状,随机选取体重100 kg左右的广益黑猪4头,禁食24 h进行屠宰测定。结果表明:广益黑猪屠宰率、瘦肉率分别为74.51%和55.18%;肌内脂肪含量5.10%,贮存损失为2.39%,嫩度3.54 kg;肌肉中总氨基酸含量、风味氨基酸含量、必需氨基酸含量以及风味氨基酸占总氨基酸比例、必需氨基酸占总氨基酸比例分别为19.65%、14.38%、8.96%、73.18%、45.6%;肌肉总不饱和脂肪酸、单不饱和脂肪酸、多不饱和脂肪酸和饱和脂肪酸含量分别为55.76%、45.63%、10.13%和44.24%;肌肉中钾、钠、镁、钙、铜和锌含量分别为0.42%、360.25 mg/kg、249 mg/kg、25.98 mg/kg、0.35 mg/kg和12.7 mg/kg。测定结果显示,广益黑猪具有良好的胴体性能和肌肉品质。
To study the carcass and meat quality of Guangyi Black Pig,four pigs of 100 kg were randomly selected to slaughter after fasting for 24 h.The results showed as follows:the dressing percentage and lean meat percentage were 74.51%and 55.18%respectively.The intramuscular fat was 5.10%,the storage loss was 2.39%and the shear force was 3.54 kg.The contents of total amino acids(TAA),flavor amino acids(FAA),essential amino acids(EAA)and FAA/TAA,EAA/TAA in muscle were 19.65%,14.38%,8.96%,73.18%,45.6%respectively.The contents of Total unsaturated fatty acids,monounsaturated fatty acids,polyunsaturated fatty acids and saturated fatty acids in muscle were 55.76%,45.63%,10.13%,44.24%respectively.The contents of K,Na,Mg,Ca,Cu and Zn in muscle were 0.42%,360.25 mg/kg,249 mg/kg,25.98 mg/kg,0.35 mg/kg,12.7 mg/kg respectively.These results indicate that Guangyi Black Pig has good carcass performance and meat quality.
