摘要
本文主要综述了国内外蛋白质、多肽螯合金属的利用现状,以及不同来源的蛋白质、多肽资源利用的高值转化方向,分别介绍蛋白质螯合物在保健品、农业、畜牧业中的应用。研究发现钙、铁、锌等金属通过与蛋白质螯合形成的金属螯合物具有较高生物活性,并且研究表明多种金属螯合物可以改善动植物许多机能,其中经过金属螯合后的蛋白质或者多肽可用于保健品、制备医药、动物饲料添加剂和氨基酸肥料等多个领域。
This review summarizes the current situation of the utilization of protein and peptide chelated metals at home and abroad,as well as the utilization of different protein and polypeptide resources and the transformation towards higher values.The application of protein chelates in health care products,agriculture and animal husbandry are introduced respectively.The study found that protein chelated calcium,iron,zinc three kinds of metal elements with high biological activity,and studies have shown that a variety of metal chelates can improve many functions of plants and animals,in which metal chelated protein or polypeptide can be used in health care products,medicine preparation,a variety of animal feed additives and amino acid fertilizers and other fields.
