摘要
牛肉干是中国消费者较为喜爱的一款休闲食品。阐述传统牛肉干产品的制作原理、原料、设备及加工工艺,介绍现代技术在传统牛肉干加工中的应用,以期为牛肉干产品的新品种开发与工业化生产提供一定的理论依据。
Beef jerky is a kind of snack food enjoyed by Chinese consumer.This paper expounded the manufacturing principle,material,equipment and processing technology of traditional beef jerky,and introduced the application of modern technology on the processing of traditional breef jerky,in order to provide theoretical basis for new products development and industrial production of breef jerky.
