摘要
通过餐饮环节食品安全监督抽检,对部分四星级以上餐饮服务单位食品原料、食品成品抽样检测结果进行分析,评价畜禽类、水产类食品药物残留安全状况,为当地餐饮食品的监督管理提供技术依据。本文主要是对生食水产品、猪肉、牛羊肉、鸡肉、鸡蛋、熟肉制品7类食品及原料检测农药、兽药、抗生素3大类20余项指标进行检测和分析,提出食品安全监管措施和对策,防控食品安全风险。
By developing the sampling inspection work of food safety supervision in shenyang’s catering industry,we analyzed the sampling test results of food raw materials and food products in the four-star food service in Shenyang.We evaluated the food safety situation of the whole city and provided technical basis for the supervision and management of local food and beverage.In this paper,the detection of more than 50 indexes of heavy metals,pigments,pesticides,veterinary drugs and microorganism in 12 kinds of food and raw materials was carried out.The qualified rate is from low to high,which is fresh juice,raw water products,pork,beef and mutton,chicken,rice,eggs,cooked meat products,pickled vegetables,non-fermented bean products,flour,cooking oil.It is suggested that the food safety supervision departments should take certain regulatory measures to prevent and control food safety risks.
