离子交换法对低度白酒质量影响的研究

Effects of Ion Exchange Method on the Quality of Low-Alcohol Baijiu

白酒在降度过程中极易出现白色浑浊及香味寡淡的问题,如何保持低度白酒"低而不浑、低而不寡"成为人们研究的焦点,本研究采用离子交换树脂对低度白酒进行处理,结果表明,选择合适的离子交换树脂,在保持低度白酒澄清透明及香味物质保留方面效果显著。

Some problems such as white precipitate and weak taste easily occur in the alcohol-reducing process of Baijiu,which has become the research focus in Baijiu-making field.In this study,ion exchange resin was applied in the treatment of low-alcohol Baijiu.The results showed that the use of appropriate ion exchange resin could achieve satisfactory effects in avoiding white precipitate and keeping the original taste and aroma of Baijiu.
