沙果渣膳食纤维过氧化氢脱色工艺研究 被引量:1

摘要 为改善沙果渣膳食纤维的颜色和品质,以H_2O_2溶液浓度、脱色温度、pH、脱色时间为考察因素,以吸光度值为指标,通过单因素和正交试验优化H_2O_2溶液对沙果渣膳食纤维的脱色工艺条件。由试验确定的最佳工艺条件为:料液比1∶10,H_2O_2浓度3%,脱色时间1.5 h,脱色温度65℃,pH为9,此时吸光度值为0.897。 In order to improve the color and the quality of dietary fiber from malusasiatica residue,the decolorization process of the dietary fiber of malusasiatica residue was optimized by single factor and orthogonal test,which taking investigated factors such as H2O2 concentration,temperature,pH and decoloration time,and taking OD value as the index.The optimized technological condition determined by experiment was as follows:H2O2 concentration was 3%,decoloration time was 1.5 h,temperature was 65℃and the reaction pH was 9.Under the condition,the OD value was 0.897.
