摘要
藜麦样品经酸水解处理,应用氨基酸分析仪对不同品种藜麦中氨基酸组分及含量进行分析。结果表明,藜麦中含有17种常规氨基酸,含量达到9.19%~13.0%,必需氨基酸和半必需氨基酸分别占总氨基酸的37.4%、4.78%;其中以天冬氨酸、谷氨酸和精氨酸含量较高,必需氨基酸中以赖氨酸含量最高,达到0.80%。藜麦中氨基酸种类齐全、配比合理。
Amino acid analyzer was used for determination of amino acids components and content in quiona by acid hydrolysis.The result showed that 17 kinds of conventional amino acids accounted for 9.19%to 13.0%and essential amino acids and semi-essential amino acids accounted for 37.4%and 4.78%respectively in quiona.Contents of Aspartic acid,Glutamic acid and Arginine were higher than others,and content of Lysine acid reached 0.8%,the highest in essential amino acids.The amino acids were found to be complete and reasonable in proportion in quiona.
