中草药去势对公鸡肌肉品质的影响

Herbal Castration on Rooster Meat Quality

为研究中草药去势对公鸡肌肉品质的影响,试验选择40日龄健康贵州黄鸡(♂)90羽,随机分成3组,每组30只,分别为对照组、试验Ⅰ组、试验Ⅱ组。试验Ⅰ组每只每日投喂五味子8粒、白胡椒6粒,试验Ⅱ组每只每日投喂五味子10粒、白胡椒8粒。100日龄时每组选择6只,测定各组屠宰率和肉质指标。结果表明:(1)贵州黄鸡去势以后,脂肪沉积能力显著提高,宰前体重、腿肌重和肝重显著增加(P<0.05),其他指标无显著影响(P>0.05)。中草药剂量大则生长快,增重多;剂量小则生长慢,增重少。(2)公鸡去势后肉质显著改善,失水率与对照组比较显著增加(P<0.05),肌肉p H值更接近优质肌肉的标准,肌肉嫩度与对照组相比也显著增加(P<0.05),并且随着中草药剂量的增大而加大。

In order to study the effect of Chinese herbal medicine on castrated rooster in this experiment choose healthy 40 days Guizhou yellow rooster feather 90,were randomly divided into three groups(30 pre group),control group,the experimental groupⅠand groupⅡ.The experimental groupⅠeach daily feeding Schisandra 8,white pepper 6,the daily ration of each experimental groupⅡSchisandra 10,white pepper 8.100 days each select six were set up slaughter rate and meat quality.The results showed that:after castration,a significant increase in fat deposition in Guizhou yellow chicken,pre-slaughter weight,a significant increase in leg muscle weight and liver weight,no effect on other indicators,but different doses of the herbal cock before slaughter weight,leg muscle weight and liver weight have a significant impact,herbs large,fast growth,less growth and slow.Meat quality significantly improved,water loss rate significantly different(P<0.05),pH closer muscle pH quality standards,tenderness significantly increased(P<0.05).Chinese herbal medicine large amount of water loss rate difference significant increase in tenderness also significantly increased,pH also closer to the standards,meat is also improved more significantly.
