大米蛋白活性肽制备关键技术研究 被引量:2

摘要 实验研究主要是以碎米糖化制糖以后剩下的下脚料米渣为生产原料,依照米渣的蛋白高温变性优势,充分利用超声波技术对米渣蛋白进行改性,通过超声作用来使紧致的蛋白质分子出现松散,进而利用多酶复合水解米渣蛋白的方式,控制水解条件,获得最优水解度。针对水解后的产物展开膜法分离,再依据活性肽的分子分布水平来截取出米渣蛋白的水解产物,然后对水解产品的理化特性和营养学价值进行评估,来设计出合适的产品配方,提高大米蛋白活性肽的市场应用价值。 The experimental study on broken rice saccharification sugar after the remaining scraps from rice residue as raw material,according to the advantage of high temperature of rice residue protein denaturation,make full use of the ultrasonic technology of rice residue protein modification,trying to make firming protein molecules through ultrasonic role appear loose,then several compound enzyme hydrolysis of rice residue protein,control the hydrolysis conditions,to obtain the optimal degree of hydrolysis,in view of the hydrolysis product of membrane separation,and then on the basis of the molecular distribution of active peptide levels to capture the rice residue protein hydrolysate,and then to the hydrolysis product of physical and chemical characteristics,and to evaluate the value of nutrition,to design a suitable product formula,the activity of rice protein peptide market application value.
