乳酸菌胞外多糖益生功能研究进展

Research Progress on Probiotic Function of Lactic Acid Bacteria Exopolysaccharides

乳酸菌是公认的食品安全级微生物,其所产胞外多糖是乳酸菌生长代谢过程中产生并分泌于胞外的一种糖类化合物,有多种益生功能,如免疫调节、抗肿瘤、抗氧化、调节肠道微生态平衡等。目前,国内外学者对乳酸菌胞外多糖的结构、功能及应用进行了深入研究。本文综述了乳酸菌胞外多糖益生功能的国内外研究进展,并对胞外多糖的作用机制作了简要概述,同时讨论了存在的问题及未来的研究方向,旨在为乳酸菌胞外多糖在动物营养中的进一步研究和生产应用提供理论参考。

Lactic acid bacteria(LAB)are generally regarded as food safety microorganisms,LAB exopolysaccharide(EPS)which are either associated with the cell surface in the form of capsules or secreted into the extracellular environment in the form of slime and has been well characterized as probiotics exerted functions in immunomodulation,antitumor,anticancer,antioxidation,intestinal microecological balance,etc.The structure,function and application of LAB EPS had been further researched by overseas and domestic scholars.This paper reviewed the research progress of probiotic function of LAB EPS and its possible molecular mechanisms,discussed the existing problems and future trends,and provided promising insights into the development of LAB EPS in animal nutrition practice.
