摘要
以鸡蛋清为蛋白质溶液,探究了不同种类的重金属离子使蛋白质沉淀的本质原因、重金属变性蛋白质沉淀产生的影响因素以及防止过量重金属盐溶液使变性蛋白质沉淀溶解的方法。研究发现,Cu^(2+)、Zn^(2+)等过渡金属离子使蛋白质沉淀是由于变性作用,pH会影响重金属变性蛋白质的溶解度,通过调节重金属盐溶液的浓度可防止过量重金属盐溶液使蛋白质沉淀溶解。
Using egg white as a protein solution,we explored the nature of protein precipitation caused by different types of heavy metal ions,heavy metal denatured proteins.The influencing factors of the mass precipitation and the method of preventing the precipitation of dissolved proteins by the excess heavy metal salt solution.Study found that Cu2+,Zn2+,etc.The precipitation of proteins due to metal ions is due to denaturation,and pH affects the solubility of heavy metal denatured proteins by adjusting the concentration of heavy metal salt solutions.The degree prevents excessive heavy metal salt solution from dissolving protein precipitates.
