摘要
烹饪专业现代学徒制人才培养具有重要意义,有利于提高学生综合技能,更好地适应工作岗位需要,彰显办学特色并提高学校影响力。但目前烹饪专业人才培养存在不足,未能与现代学徒制有效对接,制约人才培养质量提升,因此有必要采取完善和改进措施;结合市场需求,明确烹饪专业人才培养目标;紧扣餐饮行业岗位要求,完善教学课程设置;对接饭店岗位实际,灵活安排师傅带徒弟学习,并健全考核评价体系,有效引导实践教学。
The cultivation of modern apprenticeship talents for culinary majors is of great significance.It is conducive to improving students’comprehensive skills,better adapting to the needs of the job,highlighting the characteristics of running schools and improving the influence of the school.However,currently there are deficiencies in the development of culinary talents,failure to effectively interface with modern apprenticeships,and constraints on the quality of personnel training.It is necessary to adopt improvements and improvement measures:in combination with market demands,the culinary talents training objectives should be clearly defined;improve the teaching curriculum setting;docking the actual status of the hotel,flexibly arrange the master to take the apprentice to study,and improve the assessment system to effectively guide practical teaching.
