北川白山羊屠宰性能及肉品质研究 被引量:1

摘要 本试验旨在研究北川白山羊选育过程中的屠宰性能和肉品质。分别从北川白山羊选育核心群中随机选取健康的成年公羊、成年母羊各5只,开展屠宰试验。结果显示:北川白山羊成年公羊、母羊的宰前活重分别为(42.20±2.14)kg、(32.90±3.11)kg;成年母羊肌肉粗蛋白质含量21.08%,粗脂肪含量1.22%,胆固醇含量65.20mg/100g;氨基酸中必需氨基酸含量47.74%,鲜味氨基酸含量36.36%;脂肪酸中油酸含量43.46%、棕榈酸含量23.30%、亚油酸含量4.09%。表明北川白山羊肌肉品质优良,胆固醇含量低,富含人体所必需的各种氨基酸和脂肪酸,是高档肉类产品,具有较大开发利用价值。 The aim of this study was to analyze the slaughter performance and meat quality during the breeding processes of Beichuan White goat.In order to analyze the chemical composition,amino acid and fatty acid,5 male and 5 female healthy adult goats were randomly selected from the core group of Beichuan White goat breeding group.The results show the live weights before slaughter for male and female adult goats of Beichuan White goat were(42.20±2.14)kg and(32.90±3.11)kg,respectively.The content of crude protein,crude fat and cholesterol of proximate nutrient of the muscles of Beichuan White goat were 21.08%,1.22%and 65.20 mg/100g respectively.The content of essential amino acid and flavor amino acid of amino acid were 47.74%and 36.36%respectively.The content of oleic acid,palmitic acid,and linoleic acid of the fatty acids were 43.46%,23.30%and 4.09%respectively.It shows that Beichuan White goat has good meat quality,high content of fresh amino acids,especially the glutamate.The content of fatty acids is reasonable and the cholesterol content is low.It also contains necessary amino acids and fatty acids,and is of high quality,which is of great developmental and utilization value.
