摘要
介绍了果蔬保鲜贮藏加工现状及国内外有关果蔬保鲜贮藏加工技术研究进展,包括气调保鲜贮藏技术、冰温保鲜贮藏技术、减压保鲜贮藏技术等,并对我国果蔬保鲜贮藏加工产业的发展提出建议。
This paper introduces the current situation of fruits and vegetables preservation technology,and summarizes the domestic and foreign research on the fresh storage and processing technology of fruits and vegetables,including modified atmosphere storage technology,ice-temperature preservation technology,hypobaric preservation technology,biopreservation technology,plant extract preservation technology,preservatives preservation technology,ozone preservation technology,radiation preservation technology etc,and suggestions on the development of China's fruit and vegetable fresh-keeping storage processing industry.
