云南小粒咖啡中咖啡因含量比较分析 被引量:7

摘要 目的:全面了解不同产区、不同海拔咖啡生豆和焙炒咖啡豆中咖啡因含量变化规律。方法:采集保山市、临沧市、普洱市三大产区的咖啡生豆,取其二分之一进行中等烘焙,采用高效液相色谱法进行咖啡因含量测定。结果:三大产区咖啡生豆中咖啡因平均含量:保山市为1.123%,临沧市为1.040%,普洱市为:0.983%;焙炒豆咖啡因平均含量:保山市为1.211%,临沧市为1.196%,普洱市为1.150%。高海拔区,咖啡生豆及焙炒豆咖啡因含量分别为1.159%、1.275%,是低海拔区的1.215、1.175倍。结论:三大咖啡产区咖啡因含量从高到低依次为保山市、临沧市、普洱市,焙炒咖啡豆中咖啡因含量高于生豆咖啡因含量,同时,咖啡因的含量随着海拔的升高而增高,这可为提高云南咖啡品质和产业发展提供科学依据和参考。 Objective:To understand the changes of caffeine content in coffee beans and roasted coffee beans in different producing areas and at different altitudes.Methods:The coffee beans were collected from three major producing areas in Baoshan,Lincang and Pu’er City,and one-second was taken for medium roasting.The content of caffeine was determined by HPLC.Results The average caffeine content of coffee beans in three producing areas was 1.123%in Baoshan,1.040%in Lincang and 0.983%in Pu’er;The average content of caffeine in roasted beans was 1.211%in Baoshan,1.196%in Lincang and 1.150%in Pu’er.At high altitudes,the caffeine content of coffee beans and roasted fried beans was 1.159%and 1.275%,respectively,1.215 and 1.175 times higher than those at low altitudes.Conclusion The caffeine content in the three major coffee producing areas was from high to low,followed by Baoshan City,Linyi City and Pu’er City.The content of caffeine in roasted coffee beans was higher than the content of raw bean and caffeine.Meanwhile,the content of caffeine increased with the elevation of altitude,which could provide scientific basis and reference for improving the quality of coffee and industry development in Yunnan.
