枸橼酸钾钠固体饮料的研制及其尿液碱化功能测定

摘要 本文以枸橼酸钠、枸橼酸钾、枸橼酸和木糖醇为主要原料,开发一种用于碱化人体尿液的固体饮料,确定产品配方和工艺流程,并建立产品质量标准,对研制出的产品进行临床试验,检测其尿液碱化能力。结果表明,试验者在饮用枸橼酸钾钠固体饮料后的尿液pH与基础值比较差异显著,具有统计学意义(P<0.01),饮用饮用水后的尿液pH与基础值比较差异无统计学意义(P>0.05)。这说明本枸橼酸钾钠固体饮料能有效碱化尿液pH,且感官指标、理化指标及卫生指标均符合国家相关标准。 In this paper,a solid beverage used to alkalized human urine was developed with sodium citrate,potassium citrate,citric acid and xylitol as the main raw material.The product formula and technological flow were determined,and the product quality standard was established.Clinical tests were carried out to test the urine alkalization ability of the products developed.Experiment results:There was significant difference between the urine pH and basic value after drinking of potassium citrate sodium solid drink(P<0.01).There was no significant difference between the urine pH and the basic value of the urine after drink water(P>0.05).The results showed that this potassium sodium citrate solid beverage can effectively alkalization urine pH,and organoleptic indicators,physical and chemical indicators and health indicators are in accordance with the relevant national standards.
