不同硅窗面积气调包装对蒜薹贮藏期间品质的影响 被引量:9

Effect of Modified Atmosphere with Different Silicon-window Area on the Quality of Garlic Bolt during Storage

摘要 以商河蒜薹为试验材料,采用嵌有不同硅窗面积的聚氯乙烯保鲜袋进行包装,定期监测蒜薹维生素C含量、叶绿素含量、失重率、可溶性固形物含量、呼吸速率、感官品质及包装袋内O2和CO2含量的变化。研究结果表明:随着贮藏时间延长,不同硅窗面积的保鲜袋包装对蒜薹采后质量的影响差异显著,硅窗面积不同影响了包装袋内空气的组成,从而控制及影响蒜薹的呼吸速率及新陈代谢水平;78 cm2硅窗保鲜袋内蒜薹含有较高的维生素C含量、叶绿素含量、可溶性固形物含量及感官评分。综合考虑各指标变化及结合蒜薹流通现状,认为蒜薹采后选择78 cm2面积的硅窗自发气调保鲜袋进行包装贮藏,可显著提高贮藏后产品的质量和商品价值,为蒜薹采后流通及保鲜提供实践指导。 The garlic bolts harvested in Shanghe County was packaged in a PVC bag which combined with different areas of silicon-window.The concentrations of O2 and CO2 in the packaging bags,the content of vitamin C,chlorophyll content,weight loss,soluble solid content,respiration rate,and sensory evaluation were periodically monitored.The result showed that:with the prolongation of storage time,the effect of modified atmosphere packaging combined with different areas of silicon-window on the quality of postharvest garlic bolts had marked difference,and it could regulate the contents of O2 and CO2,and it could affect the respiration rate and metabolism level of garlic bolts.Among them,garlic bolts packaged in 78 cm2 silicon-window packaging had higher vitamin C content,chlorophyll content,soluble solids content and sensory evaluation score.Modified atmosphere packaging with different silicon-window areas affect the composition of atmosphere inside the package.It had been observed that a 78 cm2 of silicone-window could inhibit the respiration rate of garlic sprouts at a less low level,and was conducive to prolonging the storage period of garlic sprouts.Considering the changes of various indicators and combining with the current status of garlic sprouts industry,it can be concluded that using garlic window storage packaging combined with suitable area of silicon-window(78 cm2)for storage could maintain the quality of the products after storage and enhance the value of their products during storage of garlic bolts,which can be a practical guide for garlic bolts production.
