金秀野生茶树群体中儿茶素和氨基酸组分含量分析 被引量:12

摘要 【目的】进一步研究广西金秀野生茶树群体的生化特性。【方法】以金秀的罗香乡、六巷乡、大樟乡和金秀镇的野生茶树群体资源为试验材料,用高效液相色谱法,对茶叶中儿茶素单体组分和氨基酸组分进行检测及对比分析。【结果】金秀野生茶树群体的儿茶素组分和氨基酸组分具有丰富的多样性和变异性;各个氨基酸组分含量在不同群体间差异很大,变异范围较大,资源类型丰富;不同野生茶树群体的儿茶素品质指数变幅为210.64~818.18;不同野生茶树群体的儿茶素苦涩味指数变幅为4.02~14.12。【结论】金秀镇、六巷乡的茶树群体氨基酸总量高,与绿茶相关氨基酸含量高,适制成品质优良、滋味鲜爽的绿茶;六巷乡的茶树群体可作为高EGCG资源。不同群体的各成分含量的差异,可为各地区产品及深加工的开发提供参考。 [Purpose]To study the biochemical characteristics of wild tea colonies in Jinxiu.[Method]We detected and analyzed the content of catechin and amino acid from wild tea colomies in Luoxiang,Liuxiang,Dazhang and Jinxiu Towns by HPLC.[Results]The biochemical diversity and variation were high in Jinxiu tea germplasms.Amino acid contents were extremely different,the total coefficient variation was high,the resource types were more and the alternative range of breeding was wide.The catechin quality indexes of wild tea colonies mainly were 210.64?818.18.The catechin bitter taste index of wild tea colonies mainly were 4.02?14.12.[Conclusion]The tea germplasms with high amino acid in Liuxiang and Jinxiu were suited to be processed green tea with good quality.The tea germplasms in Liuxiang had the character of high content of EGCG.The study of biochemical composition of wild tea populations provided a theoretical basis for tea processing and tea comprehensive processing.
