黑斑蛙肌肉营养成分分析及评价 被引量:17

Analysis and evaluation of nutritent composition in the muscle of Rana nigromaculata

摘要 本研究采用生化分析方法 ,对黑斑蛙肌肉常规营养成分、氨基酸含量和矿物质元素含量进行测定。结果表明:黑斑蛙肌肉水分占鲜重的78%,粗蛋白质占20%,脂肪占0.35%,灰分为1.00%,蛋白质含量远高于其他经济蛙类。黑斑蛙肌肉中检测出17种氨基酸,氨基酸占干物质总量的70%,其中必需氨基酸占总氨基酸的47%,与非必需氨基酸的比值为70%,优于国际粮农组织/世界卫生组织(FAO/WHO)的理想模式(40%和60%),鲜味氨基酸占氨基酸总量的37%,高于牛蛙;黑斑蛙肌肉中必需氨基酸除蛋氨酸+胱氨酸外,氨基酸评分值(AAS)均大于0.85,化学评分值(CS)均大于0.65,必需氨基酸指数为70.25%。氨基酸分析结果表明,黑斑蛙氨基酸组成符合FAO/WHO标准,组成平衡,品质较好。含有丰富的矿物质钙、铁、锌、硒;铅、砷未检出,铬和镉含量低于GB 2762之规定。因此,黑斑蛙是高蛋白、低脂肪、膳食营养价值较高的食品原料,具有较大的人工养殖前景。 The contents of common nutrient,amino a cid,inorganic elements were determined in the fresh muscle of Rana nigromaculata by biochemical analysis methods.The results showed that Rana nigromaculata contained(77.86±0.26)%moisture,(0.35±0.05)%fat,(1.00±0.06)%ash,and the content of crude protein was 20.48%,much higher than other edible frogs.A total of 17 amino acids were detected in muscles of Rana nigro-maculata.The essential amino acid was 48.49%of the total amino a cid,and accounted for 94.10%in nonessential amino acid s,more than the ideal model of FAO/WHO(40%and 60%).D elicious amino acid accounted for 39.89%of the total amino acid s,higher than Rana catesbiana.The amino acid score(A A s)and chemical score(C S)of Rana nigromaculata were greater than 0.85 and 0.65,respectively,except methionine and cystine.The essential amino index(E A A I)was 70.25.The muscle was riched in mineral ions including C a,F e,Zn and Se.No plumbum and cadmium were detected,and chromium content was lower than the Standard GB 2762.The results indicate that Rana nigromaculata had good amino acid balance and good protein quality,and had high dietary nutritional value,being used for development of artificial breeding.
