正交试验优选女士保健酒渗漉工艺 被引量:1

Optimization of percolation process of women health care wine by orthogonal tests

摘要 该试验以当归、人参、玉竹、枸杞子、黄精、大枣为原料制作女士保健酒,采用正交试验,以阿魏酸、人参皂苷Rg1、Re及粗多糖含量为考察指标进行综合评价,通过考察渗漉温度、渗漉流速及渗漉前浸泡时间3个因素,对女士保健酒渗漉工艺进行优化。结果表明,女士保健酒的最佳渗漉工艺条件为渗漉温度36℃,渗漉流速0.40 m L/min,渗漉前浸泡时间24 h。在此优化渗漉工艺条件下,保健酒综合评分为9.66分,阿魏酸、人参皂苷Rg1、Re及粗多糖含量分别为7.03 mg/L、31.86 mg/L、17.69 mg/L、22 647.20 mg/L。 Using angelica,ginseng,polygonatum,Chinese wolfberry,Polygonatum sibiricum,and jujube as raw materials,women health wine was produced.Based on ferulic acid,ginsenoside Rg1,Re content and polysaccharide content as evaluation indexes,the percolation process of women health care wine was optimized by orthogonal tests to investigate percolation temperature,flow velocity and soaking time.The results showed that the optimum percolation conditions for women health care wine were obtained as follows:percolation temperature 36℃,flow velocity 0.4 ml/min,and soaking time 24 h.Under the optimum percolation process,the comprehensive score of the health care wine was 9.66.The ferulic acid,ginsenoside Rg1,Re and crude polysaccharide content were 7.03 mg/L,31.86 mg/L,17.69 mg/L and 22 647.20 mg/L,respectively.
