摘要
[目的]延长滑菇的货架期。[方法]采用不同剂量的电子束辐照滑菇进行贮藏保鲜试验。[结果]在常温、聚乙烯(PE)保鲜膜分装条件下,适宜剂量的辐照可有效延长滑菇货架期3~5 d。电子束辐照对滑菇具有非常显著的护色和保持形态的效果,并延缓褐变和细胞膜损伤进程,有效降低滑菇的失重,其中0.9 k Gy辐照处理的保鲜效果最佳。[结论]此项技术具有实际应用价值,可深入研究其机理用于生产实践。
[Objective]To prolong shelf life of Pholiota nameko.[Method]With different doses of electron beam irradiate Pholiota nameko to prolong the shelf life.[Result]The results show that the shelf life can be effectively extend for 3-5 days under appropriate dose of irradiation,at room temperature,PE cling film packaging condition.Electron beam irradiation has a very remarkable color protection and morphological effect on Pholiota nameko,and it also slows the progress of browning and cell membrane damage,and effectively reduces the weight loss of Pholiota nameko.Among them,the preservation effect of 0.9 kGy irradiation is the best.[Conclusion]This technology has practical application value and can be used for production practice.
