董酒工艺-中国最复杂的白酒工艺之一

摘要 我国是白酒生产大国,白酒文化源远流长,伴随着我国上下五千年的发展历程,董酒是我国白酒的一种,在1963年全国评酒会议中被列为八大名酒。文明于全国,近年来更是与国酒茅台齐名,民间流传"茅台国酒甲天下,董酒贵州半边天"的说法。董酒在制作工艺以及成品酒风格上有着与众不同的特点,工艺相对其他白酒也较为复杂,文章就董酒工艺、香型及风格上的独特特性展开研究。 China is a big country in white liquor production,and with the development of 5,000 years in China,white liquor culture has a long history.Dong liquor is a kind of white liquor in our country and was listed as eight famous liquors in the national liquor evaluation conference in 1963.Dong liquor is civilized all over the country,and in recent years,it has become the same famous as Maotai,a national liquor.There is a popular saying that the national liquor Maotai dominates the world,while dong liquor occupies half the sky in Guizhou.Dong liquor has distinctive characteristics in its production process and the style of finished liquor.Compared with other white liquor,the process of dong liquor is also more complicated.The article carries out a study on the unique characteristics of dong liquor in process,flavor and style.
