摘要
以荸荠皮为原料,经过清洗、风干、粉碎、筛理等工序制备荸荠皮基料,然后通过添加一定的粘合剂、润滑剂、甜味剂等制备荸荠皮咀嚼片,旨在进一步提高荸荠的综合利用水平。研究结果表明,荸荠皮基料的不溶性膳食纤维含量为38.9%、多酚含量为3.5%、总黄酮含量1.1%;荸荠皮咀嚼片的最佳配方为:荸荠皮基料55%、木糖醇10%、羟丙基甲基纤维素17.5%、微晶纤维素5%、硬脂酸镁1.8%,其余为填充剂。该咀嚼片呈棕红色、带有荸荠清香,富含膳食纤维、多酚及黄酮等多种功能成分,选用的甜味剂木糖醇亦有一定的保健功能;产品脂肪含量很低,性质稳定、保质期长。
The eleocharis tuberosa peel was used as raw material to prepare base material by cleaning,drying,crushing,sieving and other process,and then to prepare chewable tablets by adding some adhesives,lubricants,sweeteners and so on,in order to further improve the level of comprehensive utilization of eleocharis tuberosa.The results showed that the content of insoluble dietary fiber of eleocharis tuberosa peel base material was 38.9%,polyphenol content was 3.5%and total flavonoids content of 1.1%;the best formula of eleocharis tuberosa peel chewable tablets:eleocharis tuberosa peel base material 55%,xylitol 10%,hydroxypropyl methyl cellulose 17.5%,microcrystalline cellulose 5%,magnesium stearate 1.8%,remaining were filler.The chewable tablet is reddish brown,with fragrance of eleocharis tuberosa,rich in dietary fiber,polyphenols and flavonoids,the sweetener xylitol also has certain health function;the fat content of the product is very low,the quality is stable and long shelf life.
