高效发酵人工窖泥的制备及应用研究 被引量:4

摘要 采用平板计数、窖泥理化分析法、微生物菌落结构分析法、感官评价及色谱分析法等工具,对8个候选窖泥配方的微生物组成、理化性质及感官特征进行了比较分析,结果表明,8个人工窖泥方案进行中,8号窖泥配方(X8)具有较好的各项指标,为最优窖泥配方;进一步采用X8窖泥配方制备窖泥,进行夹泥发酵工艺生产试验,以检测其发酵功能,结果表明,试验组与对照组间乙酸乙酯(Sig=0.111>0.05)差异不显著,乳酸乙酯(0.05>Sig=0.022>0.01)在试验组与对照组间差异显著,己酸乙酯(Sig=0.001<0.01)、丁酸乙酯(Sig=0.002<0.01)、总酯(Sig=0.001<0.01)、总酸(Sig=0.009<0.01)差异极显著。 In this study,the methods including plate count,physiochemical analysis,microbial community structure analysis,sensory evaluation and chromatographic analysis were used to analyze the compositions,the physiochemical properties,and sensory characteristics of eight candidate pit mud samples.The results suggested that,among the preparation formula of the eight samples,X8 pit mud formula was the best.Then X8 pit mud was used in fermentation test to investigate its fermentation performance.The results showed that,the difference of ethyl acetate between the contrast group and the experimental group was not significant(Sig=0.111>0.05),but the difference of ethyl lactate(0.05>Sig=0.022>0.01)was significant,and the difference of ethyl caproate(Sig=0.001<0.01),ethyl butyrate(Sig=0.002<0.01),total esters(Sig=0.009<0.01)and total acids(Sig=0.001<0.01)was extremely significant.
