摘要
通过添加不同浓度乳酸溶液来调节配糟酸度,模拟生产工艺流程,开展单因素实验验证配糟酸度对小曲清香型白酒酒质色谱关键指标中的甲醇、正丙醇和杂醇油及出酒率具有显著性影响,为生产过程中配糟酸度的调节提供指导。
In our lab,different concentration of lactic acid solution was added to adjust the acidity of distillers grains,then simulated production was conducted,and single factor test was performed to verify the negative correlations between the acidity of distillers grains and liquor yield and key chromatographic indexes of Qingxiang Xiaoqu Baijiu including methanol,n-propanol and fusel oil.The study provided useful reference for adjusting the acidity of distillers grains in the production process.
