摘要
文章分析比较了英美两国食品科学专业教育中的课程结构与内容特点,并就其关于多模块、学科群式的课程结构和工程能力训练方法进行了讨论。文中还就我国食品科学与工程专业本科教育工程能力训练存在的问题,提出了有利于工程能力发展的建设课程群布局的课程体系和开放性课程选择方式、构建四级实践教学体系、搭建多渠道实践平台、规范实践训练标准等建议。
This paper analyzed the characteristics of course frame and content in food science and engineering education in UK and USA,and discussed the details of course frame,including multi-module,subject groups,as well as training methods for engineering ability.It also studied the problems related to engineering ability training in undergraduate education for food science and engineering.Some suggestions were put forward,such as developing the course structure that contributed the development of engineering ability,opening course selection models,constructing four-stage practical teaching system,setting up multi-channel practice platform,and making practical training standard were proposed,which might be associated with the improvement in engineering ability.
