摘要
近年来,随着人民生活水平的提高和肉类消费结构的转变,牛肉的需求量在快速增加,同时消费者对牛肉品质的要求也逐渐提高。文章就草饲和谷饲两种不同的饲养方式对牛肉品质的影响,从肉色、大理石花纹、嫩度等感官性状和剪切力、烹制损失等客观性状做了对比分析,并从脂肪酸、维生素、胆固醇等营养方面进行了概述。旨在为我国牛肉品质的改善及肉牛养殖产业的结构性调整提供一定的借鉴。
In recent years,with the improvement of people's living standard and the change of meat consumption structure,the demand for beef is increasing rapidly.Meanwhile,the requirement of beef quality is gradually improved.Two different feedings including grass-fed and grain-fed have effects on beef quality,a comparative analysis from the meat color,marbling,tenderness and sensory properties such as shear stress,cooking loss of objective traits,and from fatty acids,vitamins,cholesterol and other nutrition was summarized in this paper.The purpose is to provide some reference for the improvement of beef quality and the strategy adjustment of beef cattle breeding industry in China.
