摘要
2,6-二叔丁基-4-甲基苯酚(BHT)和2-叔丁基对苯二酚(TBHQ)是抗氧化性能优异的合成酚类抗氧化剂,在食品、化妆品行业中广泛应用。近年来,BHT、TBHQ的转化产物及其潜在毒性备受关注,开展抗氧化剂抗氧化机理的研究和转化产物毒理学评价,对合理使用抗氧化剂具有重要的指导意义。文中针对抗氧化剂BHT和TBHQ的抗氧化机理以及可能的转化产物进行初步探讨。
2,6-Di-tert-butyl-4-methyl phenol(BHT)and 2-tert-butyl hydroquinone(TBHQ)are synthetic phenolic antioxidants with excellent antioxidant properties,they are widely used in food and cosmetics industry.In recent years transformed products of BHT,TBHQ and their potential toxicity attract much attention.Research on the antioxidant mechanism and toxicological assessment of transformed products have important directive to using antioxidants properly.The antioxidant mechanism and transformed products of antioxidants BHT and TBHQ are discussed in this paper.
