摘要
采集湖北省14个烤烟产区烟叶的上部叶,采用同时蒸馏萃取-气质联用法对烤烟中的中性香气成分含量进行测定,并对检测出的34种中性香气成分按中性香气成分前体物进行归类,并将14个产烟区根据地理区域分为清江流域与环神农架区域进行分析.对新植二烯、类胡萝卜素降解物、苯丙氨酸降解物、棕色反应物、西柏烷类降解物和其他香气成分进行差异分析,并把以上香气物质与感官质量进行相关性分析,找出两地感官差异的具体中性香气成分.结果显示:上部烟叶中苯丙氨酸降解物、类胡萝卜素降解物、新植二烯含量,清江流域均高于环神农架区域且差异显著(p <0. 050);清江流域和环神农架区域上部烟叶的感官质量在燃烧性和灰色方面差异显著(p <0. 050);在差异显著的前体物中,感官质量指标香气量与二氢猕猴桃内酯的含量呈负强相关关系,燃烧性与苯乙醛、金合欢丙酮呈负强相关,烟气量与苯甲醛、苯乙醛、香基叶丙酮、巨豆三烯酮b、巨豆三烯酮c、巨豆三烯酮d、新植二烯的含量呈负强相关关系,且苯乙醛、金合欢丙酮、巨豆三烯酮b、巨豆三烯酮c、巨豆三烯酮d、新植二烯在两区域间含量差异显著(p <0. 050),这几种香成分可能是造成两区域烟草风格差异的物质基础,对于特色香烟工业制作可提供指导.
The upper leaves of flue-cured tobacco from 14 flue-cured tobacco producing areas in Hubei Province were collected.The content of neutral aroma components in flue-cured tobacco was determined by simultaneous distillation and extraction and GC-MS.The detected neutral aroma components were classified according to neutral Aroma components precursors,and 14 cigarette areas were divided into the Qingjiang River basin and the surrounding Shennongjia area for analysis according to the geographical area.The differences of neophytadiene,carotenoid degradation products,phenylalanine degradation products,brown reactants,cetane degradation products and other aroma components were analyzed,and the correlations between the above aroma components and sensory quality were also analyzed to find out the specific neutral aroma components of the sensory differences between the two regions.The results showed that the contents of phenylalanine degradation products,carotenoid degradation products and neophytene content in the upper part of the Qingjiang River basin were higher than those in the surrounding Shennongjia area(p<0.050).The sensory quality of the upper leaves of flue-cured tabacco in the Qingjiang River basin and the surrounding Shennongjia area was significantly different in flammability and gray(p<0.050).Among the precursors with significant difference,there was a negative strong correlation between sensory quality index aroma and dihydroactinidiolide.Flammability was strongly correlated with phenylacetaldehyde and gold Acacia acetone.The concentration was negatively correlated with benzaldehyde,phenylacetaldehyde,menthyl acetone,megastigmatide b,megastigone c,megastigone d,and neophytadiene(p<0.050),and the content of phenylacetaldehyde,acacia acetone,megastigmacetone b,megastigmatrienone c,megastigmatrienone d and neophytadiene differed significantly between the two regions.Several fragrant ingredients may be the material basis for the differences in tobacco style between the two regions,and provide guidance for the production of specialty cigarettes.
