电子鼻技术对山葡萄酒酒龄的识别 被引量:12

摘要 以山葡萄酒为研究对象,利用电子鼻(E-nose)技术对山葡萄酒的酒龄进行识别。对山葡萄酒的样品体积分数、样品体积和样品瓶顶空生成时间3个参数进行了优化,利用优化的参数对2014-2017年四年生产的山葡萄酒进行酒龄识别。结果表明,山葡萄酒的优化参数为样品体积分数10%、样品体积5 m L、样品瓶顶空生成时间30 min;采用逐步线性判别分析法(Step-LDA)对2014-2017年的山葡萄酒进行分析,电子鼻能对2014-2017年四年的山葡萄酒进行识别,对2014、2015、2016年的山葡萄酒识别准确率为100%,对2017年的山葡萄酒识别准确率为70%。 Taking the wild grape wine as research object,the age of wild grape wine was identified by electronic nose technology.Three parameters including sample volume fraction,sample volume and sample headspace generation time of the wild grape wine were optimized,and the optimized parameters were used to identify the ages of wild grape wines produced in the four years from 2014 to 2017.The results showed that the optimal parameters of the wild grape wine were determined as follows:sample volume fraction 10%,sample volume 5 ml,sample headspace generation time 30 min.The wild grape wines from 2014 to 2017 were analyzed by stepwise linear discriminant analysis(Step-LDA)method,and the wine could be identified by E-nose,the identification accuracy rates of the wild grape wines in 2014,2015 and 2016 were 100%,and in 2017 was 70%.
