摘要 胡萝卜是主要农作物之一,含有多种对人体有益的生物活性成分,如胡萝卜素、花青素、多种维生素等。黑胡萝卜是胡萝卜的一个品种,原产于土耳其,现在在一些东方国家,如埃及、巴基斯坦、印度和一些远东国家仍然作为传统的种植项目进行种植和消费。黑胡萝卜色素是黑胡萝卜的提取物,为天然色素,属于花色苷类。这些黑胡萝卜中的多酚对某些疾病,如不同类型的癌症、糖尿病、心血管疾病(CVD)和氧化应激等具有预防作用。同时黑胡萝卜色素因其良好的热稳定性与pH耐受性,成为潜在的食品着色剂来源。文章主要对黑胡萝卜色素的化学性质及其稳定性、黑胡萝卜色素的提取方法以及黑胡萝卜色素在几种主要代谢综合征如癌症、心血管疾病以及糖尿病方面的重要作用进行介绍。 Carrot is one of the main crops and contains a variety of biologically active ingredients that are beneficial to the human body,such as carotene,anthocyanin and various vitamins.Black carrot is a variety of carrot that is native to Turkey and is still grown and consumed as traditional planting project in some eastern countries such as Egypt,Pakistan,India and some Far Eastern countries.The black carrot pigment is an extract of black carrot and is a natural pigment belonging to anthocyanins.The polyphenols in black carrot have preventive effects on certain diseases such as different types of cancer,diabetes,cardiovascular diseases(CVD)and oxidative stress.At the same time,because of its good thermal stability and pH tolerance,black carrot pigment has become a potential food colorant source.Mainly focus on the chemical properties and stability of black carrot pigment,the extraction method of black carrot pigment,and the important role of black carrot pigment in several major metabolic syndromes such as cancer,cardiovascular disease and diabetes.
